RTB Chef forum?
How about a forum to share recipes and secrets. I'm a big "Q" fan, with a little Cajun mixed in, a pinch of chili head, a side of Italian and a little latino seasoning (Spanish, Mexican, Cuban, SW and TexMex). Oh did I mention seafood! What do you think?

Hey I have friends and family who are eyeballing my snakes, especially the 4'2" one. Trinidadians love their "wild meat"

Let's have it, a decent calaloo recipe! Oh, I forgot about the Islands Flair! I must say though, I was a little disappointed at the available spices on Grenada. It's supposed to be Spice Island!

I'm not a chef but I saw this and got hungry so I made a pizza and a short movie on a quick way to make pizza. Enjoy

Great video. Much faster then take-out or delivery. My pizzas usually come in a box though, it gets confusing having to add all those ingredients.

6 months ago, I'd have challenged you on that gumbo. Now that I've moved, you can have that side of Lake Ponchetrain. Legend has it, on a moonless night I went down to the crossroad with my stockpot and my spoon and came back with a pretty good recipe myself.
All that said, I don't mind sharing my food, but I'm not so generous with the recipes.
Didn't we have the idea of putting together an RTB Bites cookbook a few years back? 'Course, none of y'all were around then...

Ah, but you won't get a gorgonzola, balsamic fig jam and prosciutto pizza cooked in a wood burning oven (smoker) from delivery or a box!

I can take or leave the snails but calamari friti is a must! The best we've ever had was in northern Italy in a village called Stressa. All in all, the best, most wholesome food we have ever had was in Italy. Antibes, France was a close second, at least to me. Has anyone ever had homemade potato gnocci?
Tonight, we had Red Beans and Rice. Yes, I know it isn't Monday, but then again I don't follow silly culinary rules.

I was there in late '04. I asked about spices and was told to go to the "Spice Market". It was a tourist trap and had nothing special. I was looking for Madagascar or Tahitian Vanilla beans. I most certinally enjoyed my time in Trinidad though and had some native fare. Thus my desire for a calaloo recipe.

There are only two ways to cook calamari, fast (less that 1 minute) or slow (like brased). Anything in between will be like chewing on rubberbands. Like clams, you either eat them raw, deep fried or in chowder. You choose the right ones for the cooking method. I love oysters, raw, deep fried ( for a Po Boy) broiled or in a gumbo.

Clams? Steamers are my favorite. A must for when I go to Mass every year. Never had them good here though.
