Got Fish?
Yep I do!!
Got a nice little 37" Chinook Salmon today.
Going to let it set up in the freezer for a few days, then brine it, then breaking out the smoker.

I know nothing about preparing salmon. What does freezing it for a few days do to the fish? It would seem that freezing fresh fish would be the wrong thing to do?
What does "brine it" mean and what does it do to the fish?

It firms up the meat, then thaw it out slightly so you can cut it better.
