Is this normal?
Well, as normal as taking a reptile from the wild, breeding it in captivity, incubating the eggs in a box, selling/buying the offpsring on CL then sticking it in a plastic cage can be?
She seems to spend the better part of her day there. She was out and about for a few days then I offered her a p/k mouse yesterday. After a few hours, I removed the mouse and she's been there every since.
Is it possible that she's just looking for a way out to go eat?

If you offered her food and it was refused, seems unlikely she'd try to escape to go find the food she just refused.
More likely she's just comfortable there, however awkward it may appear to us. Seems to happen rather frequently, at least at my house.

She wedges herself between the glass door and the front of the cage. The space is about 1/2".
If she would hurry up and grow a little she wouldnt fit in there.

I would probably double check the substrate temperatures just to be sure it isn't too warm. I assume that you are not using pine or cedar in the substrate (looks like aspen?)....

no pine, no cedar. Used a temp gun on a few areas. Temps are 74/88 (+/- a few degrees in a few spots)
glad I invested the few extra bucks for the locks when I bought the cages.

It is very odd what critters do with their setups. Keep in mind their natural instinct is to find places to 'hide' that is odd and not where a predator would look.
The funny thing is, it seems when I give my larger snakes a large hide, they often find comfort on top of, behind of it rather than actually going IN it. On another situation, I gave a baby boa a half log, the bark stared coming off from it, so the critter actually pried the bark off, and would stay under it instead of actually using the half log.
If your setup is correct, then, let them do what they gonna do because they gonna do it anyway.
