When a snakes eyes go gray and then clear up and they haven't shed yet is it safe to handle them or wait until the shed?

It is fine to handle them for short periods... it's best to leave them be as much as possible until the snake has shed though.

i try to leave my snakes alone as much as possible thru the shed. but the best time to leave them alone i have found is when the eyes are blued over.
