Funny looking pic!
Question: I know little to nothing about keeping iguanas... when they shed, and a bunch of old skin stays on like that, are they calm enough to let you peel the old skin off, or do you just leave it to eventually come off by itself?

It really depends on the iguana...some are calm and some wont let you near them...The one in the pic (gollum) is a sweety most of the time, so he lets me pick at him....but yes the shed will fall of by itself with time.

I too am not very familiar with Iggy's, How long on average does it take for all the skin to come off from a single shed? Are we talking days, weeks? And how bout shedding frequency?

as far as i know there is no set time for how long a shed will take. i ahve 2 igs and they take anywhere from 1 to 2 weeks from when i first notice the skin begin to split, usually on the legs and toes first.
