Thermostat use?

So I've had these two thermostats for a while now, but haven't had anything to use them for until now (my shelf stack is almost complete). Only problem is ... I don't know how to use them. I know, I know ... but I found them for a steal (they're old, but good) and snagged them without much thought ... herp supply impulse buy.

Okay, if anyone can help me figure them out, I would appriciate it. I think I have the basic idea ... but I'm not sure.

They look like a pretty straight forward setup. The probe would go into the cage where the snake would get the most heat. If you have a heat lamp it would be on the floor under the lamp, if it's an under tank heater, it's directly over the pad. Dial in the temp you want, and then plug it in.
