If you get one rat, you're better off getting two since they are social animals and when just one rat isn't socialized enough, it can get ill with a treatable, but incurable disease and die. Unfortunately I learned the hard way.
I have two rats now that I've had for a really long time now and they're doing great since they have each other's company.

Great advice, you will also want to get two of the same sex (being your talking pet) preferably two females, males seem to be more messy and smelly.
As for convincing her show her on the Internet how good of a pet they can be, if they’re socializing with humans from day one they really can be a joy to keep. just try and find some from a breeder who handles them from the start. JMO

They don't smell bad as long as you keep their cage clean.... believe me, two females don't smell as bad as you think... I think they smell worse than mice, but that's just my opinion.
Just tell her they don't stink.. lol Plus, they're gonna be in YOUR room, so what's the big deal? ALSO.... if you ARE able to get rats, do NOT use pine or cedar as they are highly sensitive to that and can get sick and die from that also... so use aspen or that CareFresh stuff.
Also you want to make sure you get a metal enclosure for them, or a large glass tank with a locking screen lid.... cause they are escape artists, and when they get out, they are/can be a disaster to electrical cords and be serious fire hazards... that I learned the hard way also. lol

they're really sweet animals. Some come when they're called, play fetch. My mom hates rats too but she began liking mine. she would come to their cage and feed them.

Get information off the internet on how smart they are. how they can be trained, stuff like that. Maybe if she sees them as smart animals, which they are, maybe she'll change her mind??
Good luck
