Possibly w/c. They are just flighty by nature. My 2 are captive hatched and they are getting better, but still run for cover if someone stops in front of their enclosure. And if the top comes off or your pick up the hide they're under, they bolt.
If they are w/c, I'd have them dewormed. They feed on frogs as well as fish, and generally carry a pretty good parasite load because of it.
If I had to guess, I would say he's a Florida Green.
