The snake may have sensed movement, smelled rodent, and sensed heat and went for what was moving as well..being your hand..
As far as striking herself or the enclosure, Im at a loss..
Not to freak you out, but I hope she isnt having neurological problems.

And sence Peruvian's get bigger then most other red-tails they require more food other wise you have a grumpy snake such as under feed burms or retics. I would try feeding him an extra rat and in a feed box that might help him calm down.

i dont think feeding in his cage is the problem! i think he was just hungry! today he seem to be fine wont even look @ me lol! i bet he is wstill wondering where that water came from!
