Most young savs do exactly what you describe. They are skittish when young. The only good thing is that it is mostly just bluffing and you can pick them up without worrying about getting bit. Niles on the other never just bluff (they can be downright nasty). I lucked out and got a really mellow one but that was only because he had been handled constantly before I even bought him. He had already grown accustomed to people. Yours might just be nervous ever since the fall. I swear monitors remember things and some even hold a grudge (my nile is still mad at me for restraining his head one time).
Just keep working with it and it should mellow out the larger it gets.
